Vendakkai More Kuzhambu(Ladies Finger Or Okra Curd Curry)

This curry which is most compatible with rice will be popular among all in south India.Chettinad is also no exception.I dont think there will be much difference in preparation too. Those who dont like curd rice also will like this curry. For those who cannot take curd can also have this without any problem.Usually people use sour curd for the curry. But I always preffer the normal one without much sourness.More Kuzhambu can be made with many vegetables. The best suited will be Vendakkai or Okra and poosanikkai.

Ingredients
Ladies finger-8
Onion-little
Curd-2 cups
To grind
Corriander seeds-1 table spoon
cumin seeds-1 teaspoon
Channa dhal(kadalai paruppu)-1 table spoon
Red chillies-2
green chillies-2
Ginger-a very small piece
Grated cocunut-2 table spoons
To Season
Cocunut oil1 teaspoon
Red chillies-2
mustard seed-1 teaspoon
Curry leaf-little
Procedure
Soak the items given in to grind for 20 minutes. Then grind it to a smooth paste.Beat the curd in a mixie with little salt and turmeric powder.Add 1 more cup of water with it and keep aside.Cut the ladies finger into small pieces(1/2 inch). In a kadai in little oil saute the onion cut length wise and the ladies finger pieces nicely for 5 minutes.Add 1/2 cup water and cook the pieces till done.Once the pieces are cooked add the ground masala mixed in half cup of water with the salt needed.Let the mixture come to boil. Now add the curd and switch off within 2 minutes. Many have a complaint that the curd curdles. The safest way is to switch off the stove immediately after adding the curd. There is no need for the curd to get cooked. Now in a seperate kadai season the curry in cocunut oil with the items given in To season and pour on top of the curry and leave it like that till you use it(dont mix the seasoning immediately)

I tried your recipe today and it was WONDERFUL! I do not eat a lot of spice and so I cut down the green and red chillies by half. The flavor was fantastic. My husband and I could not stop eating our lunch. Thanks for sharing your recipe.

Aachi, today i made mor kuzhambu for Aneetha as she loves it...

As you mentioned Vendakkai and Poosanikkai are nice... same is the case with saypankilangu... however, today we didnt have these, so tried with Podalangai!! :D

As i love cooking, i like to change / make differences - always variety thrills me...

It really came out well - Because aneetha is very choosy eater, and she liked it...

I have not seen your post before i made the morkuzhambu - so, i missed the chana dal (kadala paruppu) that you added...

What I did differently, and would also suggest you to try Achi was -

instead of soaking the coriander seeds, jeera, greenchillies, and red - I added a bit of oil, and dry fried mustard (a littlebit), coriander seeds, jeera, green chillies, and turmeric powder.. finally added cocunut grated to this oil and fried it too.... then, put it in mixer grinder and made a smooth paste (ofcourse adding some buttermilk instead of water)...

one more tip - if someone wants to make the curd without splitting -
first make buttermilk (slightly loose), then microwave for such time that it doesnt get very hot (mild heat)... then, put the kuzhambu kadai and add the seasoning (this is mustard, red chilli (gundu milaga vathal, a bit of hing powder) then add the buttermilk, then the blend paste.... :)

I will try with two items that i missed (ginger and kadalai paruppu)... Aneetha for some reason adds pachaarisi too :)

mine was typical kerala style i guess (i dont know! but it was tasting so) - And, this is the first time i am keeping mor kuzhambu without any recipe.. just by taste and thought.... :)

Hi Solai Achi,

I tried ur more kolambu receipe today. Really it came out well.
I did slight modification by adding coriander powder directly and adding kadali mavu by dissolving it in water, Also for vegetables I added vendakadai fry to the kolambu finally.

This was he first time I tried more kolambu and it came out well
