Chicken Biryani in Pressure Cooker


I don't usually make biryani using cooker but my readers were asking for the recipe using cooker as many don't have the big vessel or arrangement for keeping dum.For a long time I too wanted to make a false proof biryani using cooker. The problem with the cooker is that if we are not sure about the time and water ,there are chances of biryani getting burnt or overcooked. So I wanted to make sure of the cooking time and proportion of water (coconut milk) to rice so that the biryani is the same each time we cook. Even then I think that the proportions may vary for a different quality of rice. I have tried with the usual India Gate Basmathi rice. So for basmathi rice this proportion will be fine I guess.Ingredients

Basmathi rice -2 cups (400 gms)
Chicken - 1/2 kg (500 gms)
Big onion-2
Tomato-2
Coconut milk -1 cup or milk taken out of a small coconut

Ingredients for grinding masala

ginger -3 small pieces

garlic-10 pods

fennel seeds-1 teaspoon

green chili-4

red chili-4

Cinnamon-small piece
Mint leaves-handful (gives the real flavor)
cloves-3
Ingredients For Marinating the Chicken
Curd -1 tablespoon
Chili powder -1 tablespoon
Coriander powder -1 1/2 tablespoon
Turmeric powder-1 teaspoon
Grinded masala- half portion


Items for seasoning
Brinji leaf- 2 small pieces
cinamon-2 pieces
clove-3
Marudani mokku -2
Curry leaf-little
Mint leaf-handful
Fennel seeds-1 teaspoon

Procedure

Marinate the chicken with the items given for marination.
Let the chicken stay marinated for at least 30 minutes.

Mean while wash the rice and soak for 10 minutes.
Drain the rice and roast in a kadai in little butter or ghee (1 tablespoon)

The rice should be roasted in medium fire for 3 or 4 minutes till rice don't stick to the kadai.
Keep the cooker in the stove.

In 2 tablespoons of cooking oil mixed with little ghee season the biryani with the items given for seasoning.
saute the minced onions and tomatoes for 3 minutes.

Add the grinded masala (the remaining half) and saute well.
Now add the marinated chicken and saute well.

Keep the flame in medium and just keep the lid on top of the cooker.
No need to lock the cooker or put weight.

Cook the chicken for 6 minutes or till it gets half cooked.
Make sure that there is not much water in the chicken

Now add 1 cup of coconut milk mixed with 2 cups of water.(1:1 1/2)
Those who want the rice to be well cooked can add 1/2 cup more water.

Add the salt needed and the rice.Mix well.
Close the cooker.

When pressure starts coming put the weight.
Keep the flame low once the whistle comes.

In medium fire cook for exactly 8 minutes.
Once the pressure gets released open the cooker and mix well without smashing.

Your biryani is ready.
Garnish with coriander leaves while serving.

Laz,If you are going to use Indian made pressure cooker then I think 8 minutes will be enough.May be you can cook for 2 more minutes.my daughter cooked 6 cups twice in cooker for my grandson's birthday party and said that she cooked for 8 minutes only.While cooking large qty add little more chili powder to the chicken.

Solai Achi, I made this yesterday following your recipe exactly. I've made different biryanis about 20 times, but this was the best one! The rice was perfect! I think the pressure cooker improves the taste.

The only suggestion I'd make to people who live abroad (if you'd permit me) is please use freerange chicken rather than the caged ones. Less fat, less water, much better taste! Well worth the extra cost.

I tried the same receipe and the cooker dint while and the bottom got burned and the top rice dint cook. not sure what to do, the whole thing went for a waste.

Pri,You would,nt have reduced the flame.Only then it will get burnt.fLame should certainly be reduced.

Mathi,If you follow the blog exactly the biryani will not get smashed.Dont try to cook 10 cups at a time.Cook 4 cups at a time.

Priya,If you have one cup thick coconut milk just add 2 cups of water to it so that you will have 3 cups of coconut milk needed for 2 cups of rice.If you find your biryani very dry then next time increase the qty of coconut milk and water and make it 4 cups for 2 cup rice.

Hi Achi,i tried this recipe for 1/2 kg chicken and 2 cups of rice,exactly follwed u,it was awesome...But when i tried it for 1 and 1/2 kg chicken and 3 cups of rice it dint come out tat well...may be the mistake was with the quantity of water.can u guide me??how many cups of water & coconut paste i need to add for 3 cups or 4 cups of rice?

I accidentally bumped into this blog and tried this recipe right away. It came out unbelievably good. I just forgot to add Mint Leaves during saute which probably affected the flavor a little bit but still the taste was very good. i dont know what misleads you sathya.the items in that plate has to be grinded.i have not mentioned shallots alone in ingredients by mistake.it has not mislead anybody so far.

Thank u Achi.. I tried chicken Biriyani from ur recipe and it came out so Delicious, it makes a Perfect Biriyani. My Aithan loved it. and I tried Mushroom biriyani in same chicken biriyani style.. Hi aunty... just came across your blog while searching the recipe for chicken biryani. Planning to try it today. I have few basic doubts. Pls do help me out in it .
1. I don't know if I would be able to get marudhani mokku here in US. What's the substitute for it? And is there any substitute for it incase I don't get it?

2. Am planning to make coconut milk from grated coconut. How many tablespoons of coconut would be required to make the required 1 cup of coconut milk?

You can skip the spices that you dont get vijay.star anice is marudani mokku.you need half coconut grated.
