Chettinad Mutton Chops

Chettinad mutton chops, I am sure needs no introduction. Nobody will miss a chance to taste this wonderful chettinad non veg item. In those days Mutton was the most commonly cooked non vegetarian in chettinad. But since all have become calorie conscious, now a days more of chicken and fish is used. But nothing else can take the place of good mutton in taste especially the chops. Due to the high fat content, I also very rarely cook mutton at home. My younger daughter is a big fan of mutton gravy. So now days, I am forced to buy this at least in small quantities. She just took the gravy and did not like the pieces. So today I tried the chops, and she just loved it. Young people who can have this now should never miss a chance to taste this. Once you grow old, so many food restrictions start coming. So make use of the opportunity now and try out different recipes. This is a wonderful recipe worth trying



Ingredients (to cook the mutton first)
Mutton-1/2 kg
Small onion-30 or big onion-1
Tomato-1
Garlic paste-1 teaspoon
Chili powder-1 table spoon
Coriander powder-1 1/2 table spoon
Fennel seeds-1 teaspoon
Keep the cooker in the stove. In one teaspoon of oil season the mutton with a teaspoon of fennel seeds and curry leaf. Add the minced onion and tomato pieces. Sauté for a while. Add the mutton pieces and the ginger garlic paste. Sauté for 3 minutes i.e., till water oozes out. Now add the chili powder, coriander powder and turmeric powder. Mix well. Add just one cup of water and half the salt needed. Close the cooker. Cook in high flame till first whistle come. Now reduce the flame to medium and switch off the stove after 5 minutes. The mutton pieces now will be 3/4 cooked
Ingredients for Coconut paste
Cocunut-3 table spoons
Cashew -8 or Kas Kas-1 teaspoon
Fennel seeds-1 teaspoon
Grind the above items to a smooth paste
Ingredients for the Chops
Minced onion (big)-1
Tomato minced-1
Garlic-10


For seasoning
Cinamon-2 pieces
Clove-2
maruthani mokku-1
Annasi poo-1 small piece
curry leaf little
Procedure
Keep the kadai in the stove. In 1 to two tablespoons of oil, season the chops with the items given in 'to season’. Add the onion and tomato pieces and sauté till the tomato pieces get smashed. Now add the coconut paste, little chili powder and salt. Mix everything well. Add the cooked mutton along with the gravy in it. Mix every thing well and cook in medium fire till you get the desired consistency. In between check for the salt and hot taste and add if needed. When the gravy gets almost evaporated it will start getting burnt .So be very careful now and go on stirring. Switch off when it gets to your desired consistency. Add 1 teaspoon of lemon juice and mix well. Garnish with coriander leaves

Dear Achi,

Not sure if you can help me with this one. Its a non-culinary question. I will be taking my parents to Pillayarpatti for their 'Arubatham Kalyanam' after our stay at Chettinadu Mansion. The wedding is on 13th September between 8am-12pm. I would like to know if you know anyone who could help with my mother's 'mana penn alangaram', i need someone who would know how to do the jadai and flowers for her. Also, do you know anyone in the region who qualifies as a good wedding camera man? I would like to capture this special event on dvd for the grandkids. :)

I couldnt really locate anyone on the internet, i hope you have some good leads for me. :)

You please contact Mrs Meena of Chettinad mansion through whom ,I guess you booked the room.I think she can help by giving you the telephone numbers.Pillayarpatti is just 12 km from chettinad.Karaikud is the nearest town 5km away.It is reasonably a big town with one or two beauty parlours and a number of good studio.If the day does not fall on a muhoortham day no problem,else you have to book in advance.If you cannot contact meena,please leave a comment,I will find out the numbers

dentgal,It is actually called marathi mokku and in collocial language we have made it maruthani mokku.its english name as far as i guess is CAPPARI SPINOSA.Try and write your comments

Hello Solai Achi,

A quick clarification about the spices in the recipe. I know the anasi poo is star anise. What you call marathi moggu - it looks like black and white burnt crumpled paper - is that right?

If so, is it called kallupachi? (I believe Marati moggu looks like small black thick stems about an inch and a half long.) My reference is from a cookbook called Cooking at home with pedata. You can see the picture of kallupachi here .

I made it with the both, (though I only used one stem of the latter spice), and the dish was quite tasty.

Hi Aachi, my aaya adds tomatoes only for fish curries and says that no tomatoes should be added to anyother non veg varities , as they start giving a pulippu taste n kind of a veggie smell.....that is y we dont add puli too....but i see that u never miss tomatoes to any of your Non Veg reciepies............which is authentic?

Radha,The reason for not adding tomotoes those days in non-veg was mainly because it will spoil the dish next day if not refrigerated.But now we dont have that problem.Moreover tomatoes always enrich the taste of the dish and also help in increasing the masala content.So this is a slight improvisation to add taste.

thanks for ur service. It's really very helpful to me. Actually I know little bit about cooking. But I know the exact way to cook. That is I put all the onions and tometos and ginger garlic paste together and saute for the all the dishes. But through ur website I learned a proper method and how to make a dish is very taste. Dear Solai Aunty,

I am regular visitor of your site and am a great fan too trying out various dishes and we have been able to dole out some fantastic dishes unlike many other recipes which usually dont turn out so good.

Out of all the dishes that we have tried, the mutton chops have been the best seller and the aroma just fills the house especially with that sweet smell of fennel seeds.
