Vellai Poondu Oorukai (Garlic Pickle)

The word pickle itself will tickle the taste buds of many. All in our home too are very big fans of pickle especially the garlic pickle. But now days have started totally avoiding it due to health reasons. Today My Chithi has come home and I wanted to make this pickle and write a blog on this since she is very good in preparing pickles . Moreover I have two lemon trees in my garden and have reaped nearly 500 to 600 lemons this season and I am going on making juice and storing it for the whole year. I thought that I will make use some lemons for the pickle too.


Ingredients
Garlic-! /2 kg (peeled and cut into two halves lengthwise)
Gingili oil-150 ml
Lemon juice-1 ½ cups (300 ml)
Ingredients for the pickle powder
Coriander seeds-50 Gms (1/2 cup)
Fenugreek seeds-1 table spoon
Chili powder-3 table spoons
Jaggery-1 table spoon
Procedure
Dry roast coriander seeds and fenugreek seeds and grind it to a smooth powder. Put the kadai in the stove. In the oil mentioned season the pickle with 2 teaspoons of mustard seeds. When mustard seed cracks add the cut garlic pieces and sauté nicely for 5 to 6 minutes till the garlic gets softened. Now add the lemon juice and allow it to cook in slow fire for 5 minutes. Now add the coriander powder, chilli powder, fenugreek powder and the salt required. Let this powder also get cooked till the oil ooze out (5 minutes).Now add the jaggery and switch off the stove after 2 minutes. Allow it to cool and transfer the contents to a clean bottle.

We get the "mallai poundu" here, sounds very simple. You had so much of lemons....That is a work,could u blog how u store the lemon juice in ur lemon pickle post may be? Delicious pickle!

Thank u very much for your recipe. In the recipe you had mentioned about adding 1 1/2 cups of lemon juice and heating it more. My question is will heating lemon juice will make the thokku bitter kasapu thanmai.

Also can u post the recipes for bakoda kuzhambu and bakoda kurma just like they serve in restaurents.

I'm happy to try all your vegetarian recipes.

Vidhya,The bitterness you get in the pickle is due to oversqueezing of lemons and not due to heating of lemon juice. You should certainly cook the juice also for some time.I got a wonderful pickle following this recipe exactly.I will post the pakkoda kuzhambu recipe soon

Poondu oorukai is really tongue tickling! Looks awesome! And 500 lemons?? Wow, you seem to be having a big garden! Definitely waiting for your lemon pickle recipe :)

Thankyou jennila.I dont think that vinegar will be good.Try to use the lemon juice itself

Your pickle recipe sounds yummy.Can you please tell approximately how many garlics are equal to 1/2 kg??Cant wait to try this recipe

I think 15 to 20 whole garlics will make 1/2 kg.See the snap,I have used 1/2 kg aarti.I usually go and buy 1/2 kg and use the whole thing.If you are not in India make conversions to the scales you have in your place.but the measurement for the pickle is always a must

Aachi, I tried the garlic pickle today!! Man... It turned out sooooo good!! I have no words. Thanks Achi. I actually got lot of garlic today and wanted to make Poondu oorugai right away. But I can't call my amma for recipe because it was midnight for them.. Then I thought may be i will check your blog. Found it!! Tried it!! Turned out so well. Umayal,Amla already is sour.so no need of lemon.For amla,First boil amla for 5 minutes,Take out the seed cut into pieces.Using the other ingredients you can make pickle.give it a try

i made poondu orukai its very nice my daughter liked very much,in hostel while she opened the bottle of poondu oorukai all her friends likes the smell lotthank u very much. i prepared nelikai orukai it is quiet ok.Here we are getting lots of orukai engi (pickle ginger) pls guide me for making pickles.My daughter is comming for vaction for deepavali i like to prepare this pickle.
